The Champagne Dinner
Saturday, December 15, 2007. 7:00 p.m
La Belle Vie Restaurant, 1606 South Eight Street, Colorado Springs
I’ll be the first to admit that I absolutely adore champagne – but this admiration extends not to the usual suspects like Veuve Cliquot, Mumm’s and Moet, but only, only, only to the crazy, maniacal, hands-on, artisanal producers who make at most a few thousand cases of each of their wines every vintage (as opposed to the millions made by the aforementioned weenies, whoops, I mean big industrial producers). There is a battle for the soul of Champagne going on right this very instant, and we’re at the front lines – and the best way to do your part is to drink the little guys’ wines every day. Yup, every day ... Hey, someone’s got to do it! On this evening we’ll be pouring a dozen or so champagnes, none of which are made in quantities of more than 6-7000 cases, often less – you just know that the producer himself turns ever single bottle during ageing. We’ll have five courses prepared by La Belle Vie’s excellent French chef, Laurent. This will be a night to remember!
